Shrimp Lo Mein (Print Version)

# Ingredients:

→ Sauce mix

01 - 1 tablespoon sugar, plus extra for browning onions
02 - 3 tablespoons soy sauce
03 - 2 tablespoons oyster sauce

→ Core ingredients

04 - 4 baby bok choy, chopped into 1-inch pieces and washed
05 - 2 small carrots, sliced into thin sticks
06 - 1 onion, sliced thinly
07 - 8 ounces of Lo Mein noodles, or spaghetti as a swap
08 - 4 green onions, thinly chopped
09 - 1 pound shrimp, peeled and cleaned
10 - 1 garlic clove, finely chopped

→ Extras

11 - ¼ teaspoon black pepper
12 - 2 tablespoons avocado oil, split between uses
13 - 1 cup vegetable broth
14 - ¼ teaspoon salt, and more for noodle water

# Instructions:

01 - In a bowl, stir together soy sauce, oyster sauce, and sugar until smooth. Set it to the side.
02 - Get a large wok or frying pan hot over medium heat, then add 1 tablespoon of avocado oil. Toss in the sliced onions, a sprinkle of salt, and a dash of sugar. Stir every so often and let them turn rich golden-brown over 25 minutes.
03 - While the onions are softening, bring water with salt to a boil. Cook the noodles as directed on the package. Drain them and rinse under cold water so they don't stick together.
04 - Using the same wok, throw in garlic and shrimp. Stir and cook for 3-4 minutes until they're pink all over and curled. Remove shrimp, garlic, and onions from the pan and set them aside.
05 - Put the rest of your avocado oil into the pan. Stir-fry the carrots and bok choy for a couple of minutes, then pour in vegetable broth. Cover it up for another 2 minutes so the veggies soften a bit.
06 - Toss the noodles into the wok along with the shrimp mix, the sauce you made earlier, and a bit of black pepper. Mix and fry for 2 minutes so the noodles can soak up the flavors. Add green onions on top before digging in.

# Notes:

01 - Can't find Lo Mein? Swap it with spaghetti for the same result.
02 - Take your time cooking the onions until they're deeply golden for the best taste.
03 - Rinse bok choy thoroughly since dirt likes to hide between the leaves.
