Onion Bean Toast Vegan (Print Version)

# Ingredients:

→ Golden Onions

01 - 2 teaspoons sherry vinegar
02 - 1/2 teaspoon kosher salt
03 - 3 tablespoons olive oil
04 - 1 pound yellow onions, thinly sliced into rings

05 - 2 tablespoons olive oil
06 - 4 thick bread slices (whole grain or sourdough works great)

→ Savory Bean Mix

07 - Fresh ground black pepper for garnish
08 - Kosher salt as needed
09 - 2 teaspoons shiitake mushroom powder
10 - 2 tablespoons vegan Worcestershire sauce
11 - 3 cups cooked beans with broth (cannellini or ayocote)
12 - 1 tablespoon nutritional yeast

# Instructions:

01 - Start by heating olive oil on medium heat in a big Dutch oven. Toss in the onions and salt, letting them soften for about 15 minutes. Lower the heat and keep cooking for another hour until the onions turn a deep golden brown. Stir in vinegar and cook another 15 minutes so the color gets even deeper.
02 - Add olive oil to a skillet on medium heat. Cook the bread on both sides till they're beautifully golden. Set them on plates once done.
03 - Using the same pan, toast nutritional yeast just until it's fragrant (about 1 or 2 minutes). Add the beans along with their broth, the caramelized onions, Worcestershire sauce, and mushroom powder. Let everything simmer together and thicken up to a gravy texture.
04 - Pile the warm bean mixture onto the toasted bread slices. Sprinkle fresh pepper on top and enjoy it right away.

# Notes:

01 - You can make caramelized onions ahead of time and store them in the fridge for days or freeze them for months.
02 - If you're using chewy breads like sourdough, cut off the crusts so they don't get too tough.
03 - Instead of throwing away bread crusts, save them for breadcrumbs.
