Take the pits out of dates if they still have them. Then, cut each one halfway open to make a pocket.

Cover a small baking sheet or freezer-safe plate with some parchment paper. Lay the dates flat on it, opening them up to form pockets.

Spread nut butter inside each date, filling it about three-quarters of the way full. Put a few nuts on top before pinching them halfway closed. Freeze for around 15-20 minutes.

As the dates freeze, melt your chocolate and let it cool down just a little bit.

Take the chilled dates out of the freezer and coat them entirely in melted chocolate. You can use two spoons to help with dipping, or just drizzle chocolate if that’s easier.

Lightly sprinkle some flaky salt on top and freeze the dates again for 20-30 minutes until the chocolate sets.
