Cheesy White Bean Bake (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 large tomatoes, diced small
02 - 3 cups of cooked white beans (roughly 480 grams)
03 - 1 medium onion, chopped fine
04 - 1.5 cups of cherry tomatoes (about 200 grams)
05 - 2.5 cups of chopped spinach (roughly 200 grams)

→ Seasonings and Flavors

06 - 1 tablespoon of rich tomato paste
07 - ½ teaspoon of dried chili flakes
08 - 2 big garlic cloves, minced
09 - Salt, adjust as needed
10 - ¼ teaspoon of ground black pepper
11 - 1 teaspoon of Italian herb seasoning

→ Cheese & Oil

12 - 1 tablespoon of olive oil
13 - 2 cups shredded cheese (200 grams)

# Instructions:

01 - Warm up olive oil in a skillet. Toss in the garlic and onion, cooking until the onion looks clear.
02 - Mix in the Italian herbs, chili flakes, and black pepper. Stir it briefly, then add your tomato paste and cook for just under a minute.
03 - Put in the diced tomatoes with a bit of salt. Let them soften for 8-10 minutes, then add cherry tomatoes and cook another 10 minutes or so.
04 - Stir in the beans and spinach. Let it cook for 5-7 minutes until the spinach softens.
05 - Place the mix in a baking dish. Top it with the cheese, cover with foil, and bake at 400°F (200°C) for around 30 minutes.

01 - Feel free to swap white beans with another type if you prefer.
02 - Cut time by using marinara sauce instead of fresh tomatoes.
03 - Toss in extra veggies like mushrooms, bell peppers, or broccoli.
04 - Vegetarian? Go with cheese that's free of animal rennet.
