Cranberry Feta (Print Version)

# Ingredients:

01 - ¼ cup diced pistachios.
02 - 1-2 spoonfuls of honey, depending on taste.
03 - 225g (8oz) feta, crumbled.
04 - 2 large handfuls of cranberries, fresh or from the freezer.
05 - ¼ teaspoon of nutmeg.
06 - 2 tablespoons of olive oil.
07 - Juice and zest from 1 orange.
08 - ½ cup of plain Greek yogurt.
09 - A pinch of chili flakes (about ¼ teaspoon).
10 - ¼ cup maple syrup.
11 - Sprigs of fresh thyme for topping.

# Instructions:

01 - Blend together the feta, yogurt, olive oil, and chili flakes using a food processor. Get the mixture silky and smooth.
02 - Toss cranberries, nutmeg, orange juice and peel, and maple syrup into a pot. Bring it to a bubbling boil, then lower the heat and let it cook until it thickens—around 6-10 minutes.
03 - After the cranberry mix is done cooking, set it aside and wait for it to cool to room temperature.
04 - Spread a layer of the whipped feta into your dish, then top it with the cranberry sauce. Add the pistachios, a drizzle of honey, and some thyme leaves.

01 - You can prepare the components up to 2 days earlier.
02 - Feta can be swapped out for ricotta if you'd like.
