Oatmeal Raisin Granola Bars (Print Version)

# Ingredients:

→ Dry Ingredients

01 - A pinch of salt, about 1/4 teaspoon
02 - 1 1/2 teaspoons of cinnamon powder
03 - 1/3 cup (43g) of whole wheat flour or almond meal, whichever you like best
04 - 1 cup (85g) of rolled oats, the old-fashioned kind

→ Wet Ingredients

05 - Melt 1/4 cup (56g) of coconut oil
06 - 1/4 cup (85g) honey for some sweetness
07 - Choose your favorite nut butter; about 1/4 cup (63g)—peanut butter works great
08 - 2 teaspoons of vanilla extract—make sure it’s pure!
09 - 1/4 cup (50g) of coconut sugar or pack in some brown sugar

→ Mix-ins

10 - Optional: 3/4 cup (100g) of nuts, roughly chopped
11 - 3/4 cup (128g) raisins for a bit of chewiness

# Instructions:

01 - Set your oven to 325°F (163°C) first. Grab an 8-inch square pan, line it with parchment paper, and leave the edges hanging out to lift the mixture later.
02 - Combine everything in a large bowl and use a wooden spoon or spatula to get it fully mixed up.
03 - Spread the mixture evenly into the pan and press it down as firmly as you can. Bake for about 25–28 minutes, until the edges are golden and the top looks set.
04 - Let it cool completely on a rack for an hour, then pop it in the fridge for another hour to stiffen up. Lift out the mixture using the parchment paper, then cut into bars.

01 - They freeze well—store for up to 3 months
02 - Keep at room temperature for about a week
03 - Store in the refrigerator for 2 weeks max
04 - Packing the mixture tightly is the secret to bars staying together
