Smokey Halloumi Bake (Print Version)

# Ingredients:

01 - 250g halloumi cheese, cut into cubes.
02 - 300g uncooked pasta.
03 - 1 large zucchini, diced.
04 - 1 medium onion, chopped finely.
05 - 800g canned diced tomatoes.
06 - 2 teaspoons smoked paprika.
07 - Salt and pepper as needed.
08 - 160g strong cheddar cheese, shredded.
09 - 2 garlic cloves, minced up.
10 - 2 tablespoons olive oil, with more to grease.

# Instructions:

01 - Turn on your oven and set it to 200°C (390°F). Boil pasta in salted water for half the usual cooking time, then strain it.
02 - Warm some oil in a frying pan. Toss in garlic, onion, and half of the paprika, cooking for 60 seconds. Add zucchini and halloumi, cooking everything together for 3-5 minutes to get some color.
03 - Pour in your canned tomatoes and sprinkle some pepper. Let it simmer until bubbly, then mix in the half-cooked pasta.
04 - Spread the pasta mix in an oiled pan. Sprinkle cheddar on top and dust with the rest of the smoked paprika.
05 - Pop it in the oven for 10 minutes and bake until the cheese is golden and sizzling.

# Notes:

01 - Store frozen for 12 weeks max.
02 - Freezing in smaller portions is a good idea.
