01 - 1 tbsp fresh parsley, finely chopped
02 - 1 tbsp extra virgin olive oil
03 - 2 tsp sumac spice
04 - 1/2 tsp salt
05 - 1 large red onion, sliced thin
06 - 1 tbsp lemon juice or red wine vinegar

# Instructions:

01 - Add the thin onion slices to a bowl. Sprinkle in the salt and sumac. Use your hands to gently mix and press everything together for about a minute until the onions soak up the flavors.
02 - Drizzle in the olive oil and vinegar, then toss in the parsley. Stir well so every onion gets coated, cover it up, and let it sit for 20 minutes to develop that amazing taste.
03 - You’re all set! These sumac onions are perfect for adding a zingy edge to wraps, salads, or sandwiches. Pop leftovers in an airtight container and store them in the fridge for up to 4 days.

01 - The onions will soften as they sit. If they get too juicy, just drain the liquid before serving.
