Sesame Chicken Green Bean (Print Version)

# Ingredients:

→ Sauce

01 - 1 tablespoon rice vinegar
02 - ½ teaspoon crushed red pepper flakes
03 - 3 cloves garlic, finely chopped
04 - 1/3 cup water
05 - 2 tablespoons brown sugar or coconut sugar (or 1 tablespoon honey)
06 - ½ tablespoon cornstarch (or arrowroot powder)
07 - 1 tablespoon sesame seeds (or tahini)
08 - 1/3 cup low-sodium soy sauce (or coconut aminos)
09 - 1 tablespoon fresh ginger, grated
10 - 1 tablespoon toasted sesame oil

→ Chicken

11 - ½ teaspoon garlic powder
12 - Salt and pepper, to taste
13 - ½ tablespoon sesame oil
14 - 1 pound ground chicken (or turkey)

→ Vegetables

15 - 12 ounces green beans, trimmed and cut in half
16 - ½ tablespoon sesame oil
17 - 1 red bell pepper, diced
18 - 1 white onion, chopped
19 - 2 large carrots, sliced thin

→ Garnish

20 - Handful of sesame seeds
21 - Chopped cashews (½ cup)
22 - Sliced green onions (just the green parts)

# Instructions:

01 - In a medium bowl, mix together the soy sauce, water, garlic, brown sugar, sesame oil, vinegar, ginger, sesame seeds, red pepper flakes, and cornstarch. Set it off to the side.
02 - Warm ½ tablespoon sesame oil in a big pot set to medium heat. Add the ground chicken, toss in the garlic powder, and season with salt and pepper. Cook until the chicken is browned, breaking it apart as you go. Move it to a separate bowl.
03 - Using the same pot, heat up ½ tablespoon sesame oil. Add the onions and carrots first and cook for 2-4 minutes. Stir in the red pepper and green beans, letting everything cook another 6-8 minutes until the green beans are softly crunchy.
04 - Add the cooked chicken back into the pot along with the vegetables. Turn the heat to low and pour in the sauce. Let it simmer for 2-4 minutes, stirring as it thickens. Top it off with cashews, sesame seeds, and some green onions before serving.

# Notes:

01 - Serve it with quinoa, regular rice, or cauliflower rice
02 - If you're making rice, start it early; brown rice can take up to 40 minutes to cook
03 - Ground turkey works just as well as the chicken
