Chicken Scampi Shells (Print Version)

# Ingredients:

01 - 2 pounds of diced chicken tenderloins
02 - 12 ounces of giant pasta shells
03 - 3 tbsp of olive oil
04 - 3 cups of shredded cheese (cheddar, mozzarella, monterey jack), split

→ Spices for Chicken

05 - 1/2 tsp dried oregano
06 - 1 tsp garlic powder
07 - 2 tsp smoked paprika
08 - 1/2 tsp ground black pepper
09 - 1/2 tsp salt
10 - 1 tsp onion powder
11 - 1 tsp cayenne

→ Creamy Garlic Sauce

12 - 5 minced garlic cloves
13 - 6 tbsp of soft butter, split
14 - 1/2 tsp of red chili flakes
15 - 2/3 cup of chicken broth
16 - 1/3 cup of pasta cooking water
17 - 1/3 cup of parmesan cheese
18 - 2/3 cup of thick cream
19 - Juice and grated peel of 1 lemon
20 - 1 cup of dry white wine
21 - 2 tbsp of finely chopped parsley

# Instructions:

01 - Save a teaspoon of the seasoning. Mix the rest with the chicken and oil. Sear the pieces in olive oil until the inside hits 165°F.
02 - Sizzle garlic in some butter. Pour in wine, reducing slightly. Toss in the other ingredients for the sauce and let it thicken. Boil the pasta shells at the same time, cooking them just firm enough.
03 - Combine half of the shredded cheese with the cooked chicken.
04 - Coat the bottom of a baking dish with some sauce. Fill each shell with the chicken mix and arrange them neatly. Pour whatever sauce is left all over the shells.
05 - Sprinkle the rest of the cheese on top and bake at 375°F for about 15 to 20 minutes, watching for bubbling.
