Peppery Chicken Mushrooms (Print Version)

# Ingredients:

→ Chicken

01 - 2 chicken breasts, boneless and skinless, cut into thin strips
02 - 1 tsp salt
03 - 1/2 tsp black pepper, freshly ground
04 - 1 tbsp cornstarch

→ Vegetables

05 - 1 medium onion, cut into slices
06 - 8 oz mushrooms (button or shiitake), sliced
07 - 3 garlic cloves, finely chopped
08 - 2 green onions, chopped for topping
09 - 1 bell pepper (green or red), sliced into strips

→ Sauce

10 - 1/2 tsp rice vinegar
11 - 1 tbsp soy sauce
12 - 2 tbsp vegetable oil, split
13 - 1 tsp honey
14 - 1 tsp black pepper, freshly ground
15 - 1 tbsp oyster sauce

# Instructions:

01 - Toss the chicken slices with black pepper, cornstarch, and salt until coated evenly.
02 - In a hot skillet, add 1 tbsp oil and cook chicken strips over medium-high heat. Stir often and remove once browned, about 4-5 minutes.
03 - Using the leftover oil, cook the onions and bell peppers for 2-3 minutes. Then add mushrooms and garlic, stirring for another 2-3 minutes.
04 - Mix together the soy sauce, vinegar, oyster sauce, black pepper, and honey in a bowl.
05 - Pour the sauce over the veggies, then toss the chicken back into the skillet. Mix so everything's coated and cook for 1-2 minutes.
06 - Top with green onions, and serve warm with your choice of rice or noodles!
