Pan Breakfast Burritos (Print Version)

# Ingredients:

→ Base

01 - 12 eggs
02 - 10 flour tortillas
03 - 3 tablespoons butter, melted
04 - 4 cups shredded cheddar cheese
05 - 2 pounds ground sausage

→ White Gravy

06 - ½ teaspoon black pepper
07 - 4 tablespoons butter
08 - 2 cups whole milk
09 - ½ teaspoon salt
10 - 4 tablespoons flour

→ Vegetables

11 - 1 bunch green onions, sliced small
12 - 1 red pepper, diced small

# Instructions:

01 - Set your oven to 425°F to warm it up. Stir together butter and flour in a pan, then add milk slowly. Keep mixing until it thickens. Sprinkle in some salt and pepper.
02 - Fry the sausage till cooked, then drain the grease. In another pan, scramble already whipped eggs over heat.
03 - Coat a baking dish with some melted butter. Arrange 6 tortillas along the edges and 2 in the middle, pushing them into the sides of the pan.
04 - Start layering the fillings: gravy comes first, then sausage, eggs, diced vegetables, and cheese. Use rest of the tortillas to cover it all and tuck the edges in.
05 - Brush the top layer with melted butter. Put another pan on top as a weight. Bake it for 20 minutes, then bake another 5 minutes uncovered till it’s golden.
