Orange Cranberry Bites (Print Version)

# Ingredients:

01 - 2/3 cup white sugar.
02 - 3/4 cup butter, softened at room temperature.
03 - 1 egg, large size, at room temperature.
04 - A teaspoon of vanilla.
05 - 2 cups and 2 tablespoons plain flour.
06 - 1/4 teaspoon of salt.
07 - Orange juice, 2 tablespoons.
08 - One teaspoon finely grated orange peel.
09 - 3/4 cup dried cranberries, finely chopped.
10 - Some coarse sugar for coating.
11 - A cup of powdered sugar.
12 - 2 tablespoons orange juice for topping.

# Instructions:

01 - Blend sugar and butter until fluffy. Toss in the egg and vanilla. Add the flour and salt. Stir in the orange juice, zest, and cranberries last.
02 - Divide the dough into two logs, each about 7-8 inches long and 2.5 inches thick.
03 - Wrap the logs in cling wrap. Keep in the fridge for no less than 3 hours or for as long as 5 days.
04 - Preheat the oven to 350°F. Line your baking trays with parchment paper.
05 - If you want, roll the dough logs in coarse sugar.
06 - Cut the dough logs into 12 slices each. Bake for 13 to 15 minutes until the edges get golden.
07 - Let the cookies rest on the tray for 5 minutes before transferring them to a wire rack to cool fully.
08 - Mix the powdered sugar with orange juice, then drizzle on the cooled cookies.

# Notes:

01 - The dough freezes well for later use.
02 - Letting the dough chill longer makes the orange taste pop.
03 - You can swap chocolate for the glaze.
