In a measuring cup, place chocolate chips and set it in a small pot with water reaching up to the 8-ounce line. Melt on low to medium heat for 5-8 minutes, stirring now and then.

Grab a big bowl and toss in the cereal and coconut flakes. Pour the melted chocolate over the mix, then stir until evenly coated.

Scoop out mounds roughly the size of a snowball and drop them onto a lined baking sheet. Sprinkle on extra coconut to garnish.

Pop the tray in the fridge for 15-20 minutes or until the chocolate is fully hardened.
