Lay parchment paper on your baking pan. Whisk together the butter with powdered sugar until creamy.

Stir in mint flavor, salt, and flour until evenly mixed. Add green coloring until you like the shade. Fold the chocolate chips in last.

Scoop out dough by tablespoons, shape into balls, and arrange on the pan. Chill for half an hour.

Preheat oven to 375°F. Bake cookies 7–8 minutes, just till light golden on the edges. Rest 5 minutes on the tray.

Gently roll the still-warm cookies in powdered sugar. Once fully cooled, give them another light coating.
