Molasses Marshmallows (Print Version)

# Ingredients:

01 - Half a cup of granulated sugar.
02 - Three-fourths cup softened unsalted butter.
03 - A quarter cup of dark brown sugar.
04 - One-third cup molasses.
05 - One large egg.
06 - Two teaspoons of ground ginger.
07 - Two and one-fourth cups all-purpose flour.
08 - Two teaspoons baking soda.
09 - One teaspoon cinnamon.
10 - Half teaspoon salt.
11 - One teaspoon ground cloves.
12 - A half cup of turbinado sugar for coating.
13 - Twenty-four jumbo marshmallows.

# Instructions:

01 - Mix butter and both sugars until light and airy. Stir in the molasses and egg. Put the dry ingredients together in another bowl, then fold them into the wet mix.
02 - Shape the dough into a ball, cover it tightly with plastic wrap, and let it sit in the fridge for at least 1.5 hours.
03 - Preheat oven to 350°F. Cover the baking trays with parchment paper.
04 - Use 2-3 tablespoons of dough per piece, flatten it, wrap it around a marshmallow, and coat it in turbinado sugar.
05 - Cook for 9-10 minutes until the tops crack and marshmallow peeks out. Let them cool on the tray for 10 minutes before moving them to a rack.

# Notes:

01 - Marshmallows will vanish completely if baked too long.
02 - Cooling makes the cookies flatten out.
