To make chopping easier, pop the bacon in the freezer. Cut the potatoes into cubes and keep them soaking in water to avoid them turning brown.

Warm the olive oil in a big frying pan over medium-high heat. Drain and toss in the potatoes. Sprinkle with salt, pepper, and Old Bay, then stir as you cook for 10 minutes.

Stir the diced bacon into the pan with the potatoes. Let it cook for 5-6 minutes so it crisps up, and its fat continues to coat the potatoes.

Drop the heat to medium-low and add parsley and garlic. Cook it down for a minute, just until it smells lovely.
