Bangin' Breakfast Potatoes (Print Version)

# Ingredients:

→ Base

01 - 2 strips of bacon
02 - A tablespoon of olive oil, with extra if needed
03 - 3 medium-sized golden potatoes, unpeeled

→ Seasonings

04 - Some parsley for topping
05 - Fine salt as preferred
06 - A sprinkle of black pepper
07 - A dash of Old Bay seasoning
08 - 1-2 cloves of garlic, finely chopped
09 - A tablespoon of real maple syrup

# Instructions:

01 - To make chopping easier, pop the bacon in the freezer. Cut the potatoes into cubes and keep them soaking in water to avoid them turning brown.
02 - Warm the olive oil in a big frying pan over medium-high heat. Drain and toss in the potatoes. Sprinkle with salt, pepper, and Old Bay, then stir as you cook for 10 minutes.
03 - Stir the diced bacon into the pan with the potatoes. Let it cook for 5-6 minutes so it crisps up, and its fat continues to coat the potatoes.
04 - Drop the heat to medium-low and add parsley and garlic. Cook it down for a minute, just until it smells lovely.
05 - Pour the maple syrup over everything. Let it cook another minute so it gets sticky and delicious. Dish it up warm, maybe with a fried egg on top.

01 - Swap in red potatoes if you'd like
02 - Double or triple the amounts for more servings
