Juicy Mushroom Meatloaf (Print Version)

01 - 2 large eggs, whisked
02 - 1 teaspoon oregano, dried
03 - 1 cup breadcrumb crumbs
04 - 2 pounds of fresh ground beef
05 - 2 cloves of garlic, chopped tiny
06 - 1 onion, diced super fine
07 - ¼ cup of ketchup
08 - 1 teaspoon thyme, dried
09 - 2 tablespoons of Worcestershire sauce
10 - Salt and freshly cracked pepper to your liking

→ Mushroom Gravy Mix

11 - 4 tablespoons of butter, unsalted
12 - Salt and freshly cracked pepper to flavor
13 - ½ cup rich, heavy cream
14 - 2 cups of beef broth
15 - 4 tablespoons all-purpose flour
16 - 2 cups mushrooms, thinly sliced

# Instructions:

01 - Turn your oven up to 350°F (175°C) and get it heating. Pick a casserole dish or baking tray, and either grease it lightly or lay down a sheet of parchment to prevent mess.
02 - Grab a big bowl and put in the ground beef, breadcrumbs, onion, garlic, eggs, ketchup, Worcestershire sauce, thyme, and oregano. Add salt and pepper. Mix it all gently with your hands, but go easy; over-mixing makes it less tender.
03 - Mold that meat mixture into a thick loaf shape and settle it into your prepared dish. Move it into the hot oven and bake for 50 to 60 minutes. The loaf's temperature should reach 160°F (71°C) when checked.
04 - As the meatloaf bakes, melt butter in a skillet over medium heat. Toss in the mushrooms and sauté until they turn golden and smell great, about 5-7 minutes.
05 - Scatter flour over the cooked mushrooms and stir non-stop for a couple of minutes. Slowly pour in the beef broth while whisking, then add the cream. Stir until it thickens into a smooth, creamy sauce, about 5-7 minutes. Add salt and pepper to taste.
06 - Take the meatloaf out of the oven and let it sit a few minutes. Cut it into slices, pour hot gravy generously over the pieces, and enjoy with your favorite sides.
