Jalapeño Tuna Sandwich (Print Version)

# Ingredients:

01 - 2 slices of thick-cut bread.
02 - 1 tablespoon plain yogurt.
03 - 2 tablespoons minced green onion.
04 - 1 teaspoon spicy grain mustard.
05 - 1 teaspoon hot sauce.
06 - 2 slices of sharp cheddar cheese.
07 - 5 ounces canned yellowfin tuna, drained.
08 - A dash of salt and pepper.
09 - 2 tablespoons finely diced jalapeño.
10 - 1 tablespoon creamy mayonnaise.
11 - Extra jalapeño pieces for garnish.

# Instructions:

01 - After toasting the bread, spread the tuna mix and layer with cheese and jalapeño slices.
02 - Stir together tuna, green onion, yogurt, mayo, jalapeño, mustard, hot sauce, and season with salt and black pepper.
03 - Lightly brown each bread slice in a toaster or under the broiler.
04 - Pop sandwiches under the broiler for 2 minutes or until the cheese bubbles.

01 - Pick oil-soaked tuna for richer taste.
02 - Works great when shared, especially with sides.
