Grapefruit Citrus Bars (Print Version)

# Ingredients:

→ Base Layer

01 - ⅛ teaspoon salt
02 - 1 cup regular flour
03 - ½ cup softened butter
04 - ½ cup granulated sugar

→ Citrus Layer

05 - Powdered sugar for dusting on top
06 - 1 grapefruit, zest and juice (¼ cup needed)
07 - 3 tablespoons plain flour
08 - ¾ cup white sugar
09 - 2 large eggs

# Instructions:

01 - Set oven to 350°F. Use two sheets of parchment to create a sling for an 8x8 pan.
02 - Cream butter and sugar together (3 mins) until fluffy. Blend in salt and flour, spreading mixture in pan gently.
03 - Bake for 15-18 minutes or until lightly golden. Take out and put aside.
04 - Beat eggs and sugar for a minute to thicken. Stir in flour, grapefruit zest, and juice next. Spread over hot base evenly.
05 - Bake for another 18-20 minutes until browned and firm. Let cool fully before slicing into 16 pieces.

# Notes:

01 - Keep them stored airtight with layers of parchment in between.
02 - When baking, the middle shouldn’t wobble when it’s ready.
03 - For the best taste, grab a fresh grapefruit, not bottled juice.
