Goat Cherry Toastie (Print Version)

# Ingredients:

→ Base

01 - 2 teaspoons of rich, extra virgin olive oil
02 - 12 slices of baguette, each about half an inch thick

→ Toppings

03 - 1/4 cup balsamic glaze, store-bought or your own
04 - 1/4 cup each of soft goat cheese and cream cheese
05 - 1/2 teaspoon flaky sea salt
06 - 1 tablespoon honey, plus a little extra
07 - 24 pitted cherries, halved (frozen or fresh)
08 - One sprig of rosemary, fresh

# Instructions:

01 - Drizzle olive oil on your slices of baguette. Bake at 375°F for 7-8 minutes, flipping them over halfway through. Take them out once crisped on the outside but still soft inside.
02 - Lay cherries, cut side up, on a parchment-layered sheet. Toss with olive oil and some chopped rosemary. Roast close to the bread for 5-7 minutes, then throw away the rosemary sprig.
03 - Combine cream cheese, goat cheese, 1 teaspoon of honey, plus small amounts of lemon zest and juice in a food processor. Blend everything until smooth and creamy.
04 - Spread the whipped cheese gently over each toasted baguette. Add roasted cherry pieces, drizzle more honey and balsamic glaze, and finish with rosemary and sea salt for garnish.

# Notes:

01 - You can keep roasted cherries in the fridge for up to 3 days.
02 - The whipped goat cheese mix stays fresh for 5 days when sealed tightly.
