Throw the blackberries, sugar, lemon juice, and water into a pot. Let it bubble gently for 20-30 minutes, stirring and smashing the berries. Cool it all down to room temp.

Defrost pastry sheets for 20-25 minutes. Roll them on a floured surface into a big rectangle, then layer on some of that goat cheese and your homemade jam.

Slice the dough into 12 pieces. Fold each strip, give it a twist while gently stretching it out, and do the same for the second sheet of dough.

Brush each twist with beaten egg, sprinkle with a sugar and lemon-thyme mix. Pop them in the oven at 400°F for 16-18 minutes until golden brown. Let them cool off before eating.
