Cheese Berry Twists (Print Version)

# Ingredients:

01 - 2 cups of fresh blackberries.
02 - A couple of sheets of puff pastry.
03 - 1 tablespoon of freshly squeezed lemon juice.
04 - Half a cup of water.
05 - Three-fourths of a cup of sugar.
06 - 8 oz. goat cheese.
07 - Zest from two lemons.
08 - 2 teaspoons of finely chopped fresh thyme.
09 - 4 teaspoons of raw sugar.
10 - 1 egg.

# Instructions:

01 - Throw the blackberries, sugar, lemon juice, and water into a pot. Let it bubble gently for 20-30 minutes, stirring and smashing the berries. Cool it all down to room temp.
02 - Defrost pastry sheets for 20-25 minutes. Roll them on a floured surface into a big rectangle, then layer on some of that goat cheese and your homemade jam.
03 - Slice the dough into 12 pieces. Fold each strip, give it a twist while gently stretching it out, and do the same for the second sheet of dough.
04 - Brush each twist with beaten egg, sprinkle with a sugar and lemon-thyme mix. Pop them in the oven at 400°F for 16-18 minutes until golden brown. Let them cool off before eating.

# Notes:

01 - You can make the jam beforehand and keep it in the fridge.
02 - They’re tastiest when served at room temp.
