Spicy Garlic Bok Choy (Print Version)

# Ingredients:

→ Main

01 - 1 tablespoon vegetable oil or any neutral cooking oil
02 - 1 lb baby bok choy (or use regular bok choy, yu choy sum, baby gai-lan, or cabbage)
03 - ⅓ cup water
04 - 8 garlic cloves, finely chopped

→ Spicy Sauce

05 - 1 tablespoon regular soy sauce
06 - 1.5 tablespoons chili crisp or chili oil
07 - ¼ teaspoon white sugar
08 - 1 teaspoon sesame oil
09 - ½ tablespoon Shaoxing wine, dry sherry, or chicken broth

# Instructions:

01 - Chop baby bok choy down the middle. Wash thoroughly in cold water and let it drain completely.
02 - Stir together all the spicy sauce ingredients in a little bowl and leave it aside.
03 - In a big pan, warm up the vegetable oil over medium-low heat, then cook the minced garlic for about 10 seconds till you smell it.
04 - Raise the heat to medium-high. Toss in the bok choy and water. Cook while stirring for 2 to 4 minutes until the greens soften.
05 - Drizzle the sauce on the veggies, mix everything up, and take the pan off the heat. Serve right away.

# Notes:

01 - Swap bok choy with other Asian greens if you like
02 - Use chicken broth instead of wine if you want to skip alcohol
03 - Add more or less chili oil, depending on how spicy you prefer
