Set your oven to 400°F and let it heat up.

Cut off the stalk at the bottom of the cauliflower and set it in a baking dish or skillet with sides that are at least two inches high.

Combine softened butter, chopped garlic, paprika, and salt in a small bowl. Spread this butter mixture all over the outside of the cauliflower, making sure it's covered evenly.

Loosely cover the cauliflower with foil and roast it for about 40-50 minutes. It's done when you can stick a knife into the center and it goes in easily.

Drop the oven temperature to 375°F. Take off the foil, spoon some of the melted butter over the cauliflower, and sprinkle with cheese and chives. Bake uncovered for another 15 minutes, basting every 5 minutes until it looks golden and delicious.
