Jalapeno Hot Sauce (Print Version)

# Ingredients:

01 - 8 average or about 4-5 big jalapeno peppers, chopped into bits (equals 8 ounces)
02 - 1 ounce garlic, diced small
03 - 1 ounce white onion, cut into pieces
04 - 1/4 cup fresh lime juice
05 - 1/2 cup distilled white vinegar
06 - A pinch of salt (1/4 teaspoon)

# Instructions:

01 - Toss everything into a blender or food processor. Blend it all together til it’s super smooth.
02 - Pour the blended mix into a small pot. Keep it on low heat and simmer gently for around 10 minutes so the flavors come together. Don’t crank up the heat too much; it might mess with the look. Let it cool slightly afterward.
03 - Give it a taste and decide if it needs more salt or lime juice. If you want a silky-smooth sauce, you can strain it now.
04 - Pour the sauce into storage bottles. Let it sit and rest for a day to let the flavors mix well before you use it.
