French Onion Meatballs (Print Version)

# Ingredients:

01 - 6 medium yellow onions, thinly sliced.
02 - 1/4 cup cream or whole milk.
03 - 2 heaping cups of mushrooms, chopped.
04 - 1 1/4 pounds of ground chicken.
05 - 1 beaten egg, medium-sized.
06 - 2 sprigs of fresh thyme.
07 - 3 cloves garlic, minced.
08 - 6 tablespoons of salted butter.
09 - 3/4 cup of dry white wine.
10 - 6 slices of crusty French bread.
11 - 1 slice of whole grain bread.
12 - 2 tablespoons of fresh sage leaves.
13 - 1 cup shredded gruyere cheese.
14 - 2 1/2 cups chicken stock.

# Instructions:

01 - Set your oven to 450°F and grease a large 9x13 pan to start.
02 - Combine the soaked bread, meat, seasonings, and egg. Shape into little balls.
03 - Pop the meatballs in the oven for 15 minutes. Get them crispy on the outside but leave them soft inside.
04 - Melt butter in a skillet, cook sliced onions low and slow, drizzling wine in as they brown for 25-30 minutes.
05 - Toss mushrooms, herbs, and broth into the onion mixture. Let it bubble with the meatballs 10 minutes, then stir in cream.
06 - Layer on toasted bread slices and cheese. Broil 3-5 minutes so the cheese melts and browns.

01 - Prepare up to the simmering step in advance.
02 - Let onions soak in wine little by little.
03 - Make sure to soak your bread beforehand.
