Creamy Italian Comfort Chicken (Print Version)

# Ingredients:

→ Chicken Coating

01 - 4 chicken breasts, no bones or skin
02 - 1/2 tsp garlic powder
03 - 1/2 tsp onion powder
04 - 1/4 tsp ground black pepper
05 - 1/2 tsp salt
06 - 2 tbsp butter
07 - 2 tbsp olive oil

→ Sauce Blend

08 - 3 tbsp cornstarch
09 - 1 1/2 cups chicken stock
10 - 1 cup heavy whipping cream
11 - 4 minced garlic cloves
12 - 1/2 tsp sea salt
13 - 1/3 cup sun-dried tomatoes, chopped and drained
14 - 1/2 tsp red pepper flakes
15 - 1/2 tsp smoked paprika
16 - 1 1/2 tsp Italian herbs
17 - 10 fresh basil leaves, sliced up
18 - 1/2 tsp black pepper
19 - 1/2 cup parmesan, freshly grated

# Instructions:

01 - Stir together onion powder, garlic powder, salt, and black pepper. Sprinkle evenly over both sides of the chicken breasts.
02 - Melt butter with olive oil in a big pan over medium-high heat. Brown both sides of the chicken until golden (don't cook them through). Save the juices left in the pan.
03 - Mix cornstarch into chicken broth until smooth. Pour it into the slow cooker along with cream, garlic, and all the dry spices.
04 - Set chicken in the slow cooker, then add sun-dried tomatoes and the drippings from earlier. Cook for 6 to 7 hours on low heat.
05 - Take chicken out, stir parmesan into the sauce until melted. Put chicken back in, coat thoroughly, and sprinkle fresh basil right before serving.

# Notes:

01 - The low temp setting works best.
02 - The browning step adds loads of flavor.
03 - Try serving with some pasta or warm bread.
