Greek Tomato Fritters (Print Version)

# Ingredients:

01 - 85g plain flour
02 - 1/2 teaspoon baking powder
03 - 2 large garlic cloves, minced
04 - 1/2 red onion, finely chopped
05 - 2 large tomatoes (about 250g), chopped small
06 - Zest from 1 lemon
07 - 1/2 bunch parsley (15g), finely chopped
08 - 1/2 bunch dill (10g), finely chopped
09 - Black pepper for flavor
10 - 1/2 teaspoon salt, adjust as needed
11 - Olive oil for pan-frying

# Instructions:

01 - Add enough olive oil into a pan to cover the bottom, and get it nice and hot over medium heat.
02 - Scoop out a spoonful of the mixture and drop it carefully into the hot oil. Cook both sides until nicely golden.
03 - Toss the finely chopped onions, herbs, garlic, and lemon zest into the tomatoes. Fold in the flour, baking powder, salt, and pepper until it all comes together.
04 - Lift the cooked fritters out of the pan and enjoy them piping hot while the outside is still crispy.
05 - Chop up the tomatoes into small pieces and gather them into a large bowl.
