Southwest Chicken Wraps (Print Version)

# Ingredients:

01 - 10-12 egg roll wrappers
02 - 3/4 teaspoon chili powder
03 - 8 oz cooked chicken breast, shredded
04 - 1 cup shredded Monterey Jack cheese
05 - 2 tablespoons olive oil
06 - 1 jalapeño pepper, finely chopped
07 - 1/4 teaspoon cayenne pepper
08 - 1/4 cup chopped cilantro
09 - 1/2 teaspoon salt
10 - 1/2 cup rinsed canned black beans
11 - 1/2 cup corn (fresh, canned, or thawed frozen)
12 - 1/3 cup thawed frozen spinach, chopped
13 - 1/4 cup diced red bell pepper
14 - 3/4 teaspoon ground cumin
15 - 1/4 cup diced green onions
16 - Oil for deep frying

→ Creamy Avocado Dip

17 - 2 tablespoons fresh cilantro, chopped
18 - 1/4 teaspoon garlic powder
19 - 1/4 teaspoon onion powder
20 - 1/2 cup ranch dressing
21 - 2 tablespoons buttermilk
22 - 1 medium ripe avocado, mashed well
23 - 1/4 teaspoon salt
24 - 1 1/2 teaspoons lime juice

# Instructions:

01 - Warm olive oil in a large skillet. Toss in diced red peppers and sauté until soft. Add black beans, corn, green onions, spinach, jalapeño, cumin, chili powder, cayenne, and salt. Stir for 3-4 minutes and cook until everything is tender.
02 - Pour the cooked veggies into a bowl. Add shredded chicken, cilantro, and cheese. Stir everything so it's evenly combined.
03 - Lay an egg roll wrapper with a corner pointed at you. Scoop about 1/4 cup of the mix into the center. Fold the bottom corner up, fold in the sides, and roll it up tightly. Seal the tip with a little water. Do this for the rest of the wrappers.
04 - Bring the oil to 375°F (190°C). Drop the rolls in and cook, a few at a time, for 3-4 minutes until golden and crispy. Take them out and rest them on paper towels to drain.
05 - Mix mashed avocado, ranch dressing, buttermilk, lime juice, garlic powder, onion powder, salt, and cilantro in a blender. Blend until smooth and creamy. Serve it with the fried rolls while they're still hot.

02 - Corn can be fresh, canned, or thawed if frozen
