Bang Bang Shrimp Tacos (Print Version)

# Ingredients:

→ Shrimp Prep

01 - 1 pound large raw shrimp, tails removed, peeled, and deveined
02 - 2 eggs, large
03 - 1 ½ cups of panko crumbs
04 - ½ cup tapioca flour (or cornstarch or arrowroot starch)
05 - ½ teaspoon smoked paprika
06 - ½ teaspoon garlic powder
07 - ¼ teaspoon onion powder
08 - Salt and black pepper to your liking
09 - Non-stick cooking spray

→ Sauce

10 - ½ cup of mayo
11 - ¼ cup of Thai chili sauce (sweet)
12 - 1 teaspoon sriracha (add more if you want it hotter)

→ Slaw

13 - 8 ounces of coleslaw blend
14 - ¼ cup of chopped fresh cilantro
15 - ¼ cup of finely chopped green onions
16 - 2 tablespoons of mayo
17 - Juice from half a lime
18 - Sriracha, as much as you like
19 - A pinch of salt, adjusted to taste

20 - 10 soft flour tortillas
21 - Chopped green onions for topping

# Instructions:

01 - Use paper towels to pat the shrimp until they’re dry. Lay out three shallow dishes: one with tapioca flour and seasonings, another with beaten eggs mixed with a splash of water, and a third filled with panko breadcrumbs.
02 - Dunk each shrimp in the flour mixture first, then dip into the egg, and finally roll through the breadcrumbs. Arrange them in the basket of your air fryer, lightly spritzing with oil. If needed, divide into batches.
03 - Set the air fryer to 390°F and cook shrimp for 7 minutes. At the halfway mark, turn them over and spray the newly exposed side with more oil.
04 - As the shrimp cooks, stir together the mayo, sweet chili sauce, and sriracha in a medium-sized bowl until smooth.
05 - In a large bowl, combine coleslaw mix, cilantro, green onion, mayo, lime juice, sriracha, and salt. Stir until everything is evenly coated.
06 - Take the cooked shrimp and toss them gently in the bang bang sauce. Keep some extra sauce aside if you'd like to drizzle it on top.
07 - Warm up the tortillas. Build each taco by adding some slaw, shrimp coated in sauce, extra sauce if desired, and a sprinkle of green onions to finish.

01 - Switch to gluten-free breadcrumbs and tortillas for a gluten-free option.
02 - Plan for 3 to 4 shrimp per taco.
