Crispy Salmon Cakes (Print Version)

# Ingredients:

01 - 1/4 cup finely chopped onion
02 - 1/2 tablespoon vegetable or olive oil
03 - 1/4 teaspoon of chili seasoning
04 - Salt and black pepper as needed
05 - 3 tablespoons of mayo
06 - 1 large egg
07 - 1/4 cup of cornmeal, yellow variety
08 - 1/4 cup of plain flour (or almond flour works too)
09 - 1 (14.75 oz) can of pink salmon (bones can stay or go)

# Instructions:

01 - Pour out all the liquid from the salmon can. Move the fish to a bowl and mash it up with a fork until it looks flaky.
02 - Toss the onion, cornmeal, flour, mayonnaise, chili powder, egg, salt, and pepper into the bowl with the salmon. Stir it all up until you’ve got a nice, even mixture.
03 - Scoop the mixture and pat it into burger-like shapes. Use a measuring cup to help if you want them all the same size.
04 - Warm a skillet with oil over medium heat. Cook each patty for around 5 minutes on each side, or until they’ve got a golden and crispy outside.
