Tater Tot Cups (Print Version)

# Ingredients:

01 - 1 cup diced bacon.
02 - 2 green onions, thinly sliced.
03 - 1 tablespoon plain Greek yogurt.
04 - 1 cup shredded colby cheese.
05 - Olive oil cooking spray.
06 - 60 tater tots.

# Instructions:

01 - Preheat your oven to 350-375°F. Coat a muffin pan with a generous amount of olive oil spray.
02 - Pop 5 tater tots into each muffin slot. Bake for 10 minutes, then press the centers down gently using a shot glass to create a cup shape.
03 - Top the tater tot cups with diced bacon and cheese. Put them back in the oven for another 10-15 minutes until everything gets nice and melty.
04 - Let them cool for a bit on a rack. Carefully move the cups onto a baking sheet lined with parchment paper.
05 - Add a drizzle of Greek yogurt over the cups and finish with a sprinkle of green onions. Enjoy them while they’re warm!

02 - Swap the yogurt for sour cream if you prefer.
