Authentic Buñuelos (Print Version)

# Ingredients:

01 - 3 tablespoons unsalted butter, softened.
02 - 2 tablespoons sugar.
03 - ½ cup hot water.
04 - 1 teaspoon vanilla extract.
05 - 2½ cups all-purpose flour.
06 - ¼ teaspoon table salt.
07 - ¼ teaspoon ground cinnamon.
08 - ¼ teaspoon baking powder.
09 - Canola or vegetable oil for frying.
10 - 4 tablespoons sugar mixed with 1 teaspoon cinnamon for coating.

# Instructions:

01 - Stir together the salt, flour, cinnamon, and baking powder in a big bowl.
02 - Cut in softened butter until crumbly, then stir in sugar, vanilla, and hot water. Mix till it comes together as dough.
03 - Give the dough a good 5-6 minute knead till it's all smooth. Cover it up, let it rest for 15 minutes.
04 - Split the dough into 15 pieces. Use a rolling pin to flatten each one into thin rounds about 6 to 7 inches wide.
05 - Heat a skillet and cook the rounds quickly—roughly 10 seconds on both sides.
06 - Fry them in oil at 350°F till golden. Press the centers gently to keep them flat.
07 - Let them drain on paper towels, then toss in cinnamon sugar while they're still warm.
