Hot Honey Feta Chicken (Print Version)

# Ingredients:

→ Hot Honey

01 - 3/4 teaspoon chilli flakes
02 - 1 1/2 teaspoons hot sauce (Frank's or Cholula)
03 - 1/3 cup (110g) honey

→ Chicken Seasoning

04 - 1/4 teaspoon cayenne pepper
05 - 1 teaspoon salt
06 - 1/2 teaspoon garlic powder
07 - 2 teaspoons paprika
08 - 1/2 teaspoon dried oregano
09 - 1/2 teaspoon onion powder
10 - 1/2 teaspoon black pepper

→ Main Ingredients

11 - 7oz (200g) feta, crumbled
12 - 2 eggs, beaten
13 - 2 chicken breasts (250g/9oz each)
14 - 1/4 cup (35g) plain flour
15 - 6-8 tablespoons vegetable oil, for frying
16 - 1 cup (65g) panko breadcrumbs

# Instructions:

01 - Combine honey, hot sauce, and chili flakes in a bowl. Heat until it starts bubbling, either on the stove or 20 seconds in the microwave. Let it rest to cool down.
02 - Carefully slice each chicken breast in half to get 4 pieces. Stir together all the seasoning ingredients in one bowl.
03 - Set up three plates: mix part of the seasoning with the flour in the first, put beaten eggs in the second, and toss panko with the rest of the seasoning in the last. Dip the chicken into each plate in that order.
04 - Heat oil in a big skillet over medium to high heat. Cook the chicken for about 3-4 minutes per side till the outside is beautifully crispy and the inside is fully cooked.
05 - Sprinkle feta over the cooked chicken. Broil until the cheese gets a nice color. Add warm hot honey right before serving.

# Notes:

01 - Bake it instead at 430°F for 18-20 minutes if preferred.
02 - Keep hot honey in the fridge if made ahead of time.
03 - Pairs great with greens like arugula and crispy wedges.
