Crispy Crab Bombs (Print Version)

# Ingredients:

01 - 2 cans of white or lump crab meat, completely drained.
02 - 1 cup of imitation crab, broken into flakes.
03 - 5 green onions, finely sliced.
04 - 1 pack of cream cheese.
05 - 2 cups of shredded mozzarella.
06 - Panko crumbs for coating.
07 - Salt, as much or as little as you'd like.
08 - 2 eggs, whisked.
09 - Vegetable oil, enough for frying.

# Instructions:

01 - Stir together the crab, cheeses, onions, and a bit of salt until everything’s smooth. Chill the mixture for half an hour.
02 - Put the beaten eggs in one shallow bowl and fill another with panko crumbs.
03 - Scoop up the crab mix and form it into little balls about the size of a half dollar.
04 - Dunk each ball into the egg, then roll it around in the panko until it's covered all over.
05 - Heat the oil to 350°F and fry the balls until the outside gets crunchy and golden.
06 - Set the fried balls on a paper towel to soak up the extra oil.

# Notes:

01 - It’s best to form all the balls before starting to fry them.
02 - Feel free to use a mix of real crab and the fake stuff.
03 - These taste amazing when eaten fresh while still warm.
