Take mozzarella and slice it into 1/3-inch squares. Cut them again into triangles, ending up with 24 pieces.

Crush the Doritos into a breadcrumb-like texture with a zip bag or food processor. Put flour into one dish and mix in the spices, crack the eggs into another, and fill the third with Dorito crumbs.

Coat each cheese piece in the flour first, dip it in the egg wash, and roll it in Dorito crumbs. Repeat the process for all pieces and let them sit for 10-15 minutes.

Heat up your oil to 180C/350F. Carefully fry cheese triangles in small groups for 1-2 minutes, until gooey begins to show. Lay them on a wire rack and sprinkle salt on top while still hot.
