Cheese Stuffed Doritos (Print Version)

# Ingredients:

→ Main Ingredients

01 - 6.4oz (180g) Chilli Heatwave Doritos, crushed up
02 - 14oz (400g) block of low-moisture mozzarella cheese
03 - 1/3 cup (50g) all-purpose flour
04 - 2 beaten eggs
05 - 4 cups (1 litre) vegetable or sunflower oil for frying

→ Seasonings

06 - 1/2 teaspoon garlic powder
07 - 1 teaspoon cayenne
08 - 1 teaspoon smoked paprika
09 - 1/4 teaspoon black pepper
10 - 1/4 teaspoon salt

# Instructions:

01 - Take mozzarella and slice it into 1/3-inch squares. Cut them again into triangles, ending up with 24 pieces.
02 - Crush the Doritos into a breadcrumb-like texture with a zip bag or food processor. Put flour into one dish and mix in the spices, crack the eggs into another, and fill the third with Dorito crumbs.
03 - Coat each cheese piece in the flour first, dip it in the egg wash, and roll it in Dorito crumbs. Repeat the process for all pieces and let them sit for 10-15 minutes.
04 - Heat up your oil to 180C/350F. Carefully fry cheese triangles in small groups for 1-2 minutes, until gooey begins to show. Lay them on a wire rack and sprinkle salt on top while still hot.

# Notes:

01 - Mozzarella with low-moisture gives the best outcome.
02 - Double-coating is an option but is messy. It’ll need more Doritos and egg.
03 - They'll bake or air fry fine at 200C/400F as long as the cheese is frozen first.
04 - Goes well with garlic-herb, salsa, marinara, or sour cream dips.
