Creamy Pistachio Layers (Print Version)

# Ingredients:

→ Lady Fingers & Coffee Mix

01 - 7-ounce package of lady fingers
02 - 1 cup of brewed strong coffee
03 - 1/4 teaspoon almond flavoring
04 - 1 tablespoon of rum, optional

→ Mascarpone Pistachio Filling

05 - 4 egg yolks and whites, separated
06 - 16 ounces of chilled mascarpone cheese
07 - 2/3 cup sugar, split into two portions
08 - 1/3 cup of smooth pistachio paste
09 - 1 teaspoon of vanilla essence
10 - 1/2 teaspoon almond flavoring
11 - 1/3 cup of finely chopped pistachios

# Instructions:

01 - Combine coffee with almond flavoring and optional rum in a shallow dish. Give it a stir and let it cool down.
02 - Separate eggs. Whisk egg whites with 1/3 cup sugar in a stand mixer on high until soft peaks form, around 3 minutes. Move to a bowl.
03 - Mix egg yolks with the leftover sugar until it becomes light and smooth. Add mascarpone and blend it all together. Stir in pistachio paste and extracts.
04 - Take the yolk mix and fold it gently into the whites in two parts. Don't overmix or you'll lose the fluffiness.
05 - Dip lady fingers quickly into the coffee mix. Lay them in a 9x9-inch dish. Spread half the cream over them. Repeat this process.
06 - Sprinkle chopped pistachios on top. Let it chill in the fridge for a minimum of 4 hours, or leave it overnight.

01 - You can make it the day before and leave it in the fridge.
02 - Find lady fingers in the cookie section of most stores.
03 - Don't let lady fingers soak too long—they'll turn soggy.
