Keto Cloud Bread (Print Version)

# Ingredients:

01 - 1/2 teaspoon dried Italian herbs
02 - 1/4 teaspoon salt
03 - 3 eggs, yolks and whites separated
04 - 50 grams (about 1.8 oz) cottage cheese
05 - 1/4 teaspoon baking powder

# Instructions:

01 - Set your oven to 150°C (300°F) to heat up.
02 - Crack your eggs, putting yolks in one bowl and whites in another.
03 - Whisk the egg whites with baking powder using a mixer until stiff peaks hold their shape.
04 - Add cottage cheese to the yolks and whisk until smooth.
05 - Slowly fold the yolk mix into the whipped whites, adding salt and herbs gently at the end to keep it fluffy.
06 - Spoon the mix onto a baking sheet lined with parchment, making 6 circles. Cook for 20 minutes or until golden, but start checking after 15 minutes.

# Notes:

01 - This tasty cloud bread has no carbs and fits keto-friendly meals. It’s made mainly with eggs and cottage cheese and clocks in at just 43 calories each.
02 - You can make 10 mini breads instead of 6 bigger ones if you want smaller portions.
03 - Cottage cheese up to 40g per serving is safe for low FODMAP diets. Each bread uses around 8g. A lactose-free version can be swapped in for those avoiding lactose.
