Cottage Cheese Cloud Bread (Print Version)

# Ingredients:

→ Base

01 - 4 ounces (113g) cottage cheese
02 - ½ teaspoon white vinegar or cream of tartar
03 - 6 large eggs, separated and at room temp
04 - ¼ teaspoon salt
05 - ½ teaspoon baking powder

→ Proteins & Sweetener

06 - ¼ cup (20g) egg protein powder
07 - ¾ cup (62g) whey protein
08 - 1 tablespoon allulose (if you want)

→ Optional Seasonings

09 - 1 teaspoon vanilla stevia (great for French toast)
10 - Sesame seeds or everything bagel mix (topping)
11 - ¼ teaspoon onion and garlic powders for savory options

# Instructions:

01 - Turn your oven to 300°F. Put parchment in a 9x5 pan and grease it well.
02 - Whisk together the egg whites and vinegar until you get stiff peaks. This will take 10-15 minutes.
03 - Stir the yolks and the rest of the ingredients together until smooth. You can use a blender to make it easier.
04 - Gently add the yolk mix to the whites a little at a time. Fold it in completely.
05 - Pour the batter into your pan. Bake for 50 minutes, or until it’s golden and a toothpick comes out clean. Let it rest 10 minutes in the oven after you've turned it off.

# Notes:

01 - If you want rolls, divide into 8 portions and bake 20-25 minutes.
02 - Change the flavors depending on the seasonings you choose.
03 - Tastes best when warmed up or toasted.
