Cinnamon Blondies Bars (Print Version)

# Ingredients:

01 - 3/4 cup of soft unsalted butter.
02 - 3/4 cup regular sugar.
03 - 3/4 cup packed light brown sugar.
04 - 2 room-temperature large eggs.
05 - 2 teaspoons of vanilla extract.
06 - 2 1/3 cups all-purpose flour (a bit extra if needed).
07 - 1 and a half teaspoons of baking powder.
08 - 1/2 teaspoon of salt.
09 - 1/2 teaspoon cream of tartar.
10 - 1 cup of white chocolate chips, plus a tablespoon for topping.
11 - 1/4 cup of sugar (for filling).
12 - 2 teaspoons ground cinnamon (for filling).

# Instructions:

01 - Set the oven to 350°F and get a 9x9-inch pan ready by lining it with parchment paper, making sure some hangs over the sides.
02 - Cream butter with both sugars until nice and airy (about 2-3 minutes). Mix in eggs and vanilla. Slowly add dry ingredients and stir in 1 cup of chips.
03 - Spread half the dough into the pan. Sprinkle over the cinnamon-sugar mix, saving a teaspoon for later. Flatten bits of the rest of the dough and layer them on top.
04 - Scatter the last of the chips on top with the reserved cinnamon-sugar. Bake for 32-35 minutes, until a toothpick almost comes out clean.
05 - Let it cool completely in the pan (this takes about an hour) before slicing.

# Notes:

01 - Can be kept in the freezer for up to 3 months.
02 - The cream of tartar gives a distinct flavor but is optional.
