Tzatziki Chicken Salad (Print Version)

# Ingredients:

→ Chicken

01 - 2 boneless, skinless chicken breasts, large size
02 - 1 tsp oregano, dried
03 - 1 tbsp olive oil
04 - Salt and black pepper, as needed

→ Salad

05 - 1 cup halved cherry tomatoes
06 - Half an English cucumber, cut in semi-circles
07 - 1 small red onion, thin slices
08 - 4 cups chopped romaine lettuce
09 - Half a cup of Kalamata olives, pitted

→ For Serving

10 - Crumbled feta cheese, 1/2 cup
11 - Greek salad dressing, 1/2 cup
12 - 2 cups of Tzatziki sauce

# Instructions:

01 - Warm the olive oil in a grill pan over medium-high heat. Rub the chicken with oregano, some pepper, and salt. Grill each side for 5-7 minutes, checking for an internal temperature of 165°F. Let it rest and then slice it up.
02 - In a big bowl, mix the cucumbers, tomatoes, lettuce, olives, and onions. Toss everything with some Greek dressing to coat evenly.
03 - Lay the salad in a serving dish, add the sliced chicken on top, sprinkle the feta, and place dollops of tzatziki here and there.
