Take two bread slices and smear each with a good amount of pesto.

Place half a chicken breast on each, then add layers of onion, mozzarella, and peppers. Put a slice of bread on top.

Preheat your panini press and spritz it with some cooking spray.

Cook the sandwiches for about 3–4 minutes per side until gooey and golden.
