Chicken Pesto Panini (Print Version)

# Ingredients:

→ Base

01 - 1 cooked chicken breast, sliced in half lengthwise
02 - 4 pieces of thick-cut Italian bread

→ Spreads & Fillings

03 - 2 tbsp of slivered red onion
04 - ¼ cup of thinly cut roasted red peppers
05 - 2 tbsp pesto sauce
06 - 4 oz mozzarella (low moisture, part skim)

→ For Cooking

07 - Non-stick cooking spray

# Instructions:

01 - Take two bread slices and smear each with a good amount of pesto.
02 - Place half a chicken breast on each, then add layers of onion, mozzarella, and peppers. Put a slice of bread on top.
03 - Preheat your panini press and spritz it with some cooking spray.
04 - Cook the sandwiches for about 3–4 minutes per side until gooey and golden.
05 - Cut sandwiches into halves and dig in while warm.

# Notes:

01 - Any kind of pre-cooked chicken works fine.
02 - Thicker bread may need a longer cooking time.
