Marry Me Chicken Orzo (Print Version)

# Ingredients:

→ Main

01 - 250g orzo pasta
02 - 650g chicken breast, no skin or bones, diced (makes about 4 pieces)

→ Aromatics & Vegetables

03 - 3 crushed garlic cloves, peeled
04 - 120g fresh spinach leaves
05 - 170g jarred sun-dried tomatoes, drained of oil

→ Liquids & Seasonings

06 - 1 tsp oregano
07 - 2 tsp paprika
08 - 150ml heavy cream
09 - 1 tbsp olive oil (or drained oil from the sun-dried tomatoes)
10 - 50g Parmesan, finely grated
11 - Fresh black pepper to taste
12 - 650ml hot chicken broth

# Instructions:

01 - Add oil to a big, deep pan and put it over medium heat. Toss in the chicken pieces and cook for about 5 minutes, making sure they're browned evenly.
02 - Lower the heat and drop in garlic, sun-dried tomatoes, paprika, and oregano. Let it cook for about 3-5 minutes while stirring until the garlic softens.
03 - Mix in orzo, pepper, and broth. Give it a good stir, then cover and let it simmer for 10 minutes. Stir occasionally to prevent sticking and cook until the orzo's nearly tender.
04 - Reduce to the lowest heat. Stir in spinach with cream. Keep stirring gently for 1-3 minutes until the spinach is wilted and the cream is warmed through. Ensure chicken is thoroughly cooked.
05 - Turn the heat off and mix in the Parmesan.

# Notes:

01 - Chicken thighs can also be used; just adjust the cooking time.
02 - You may need more broth if the orzo runs out of liquid before it's tender.
03 - This is a one-pan meal, perfect for less cleanup.
