Chili Lime Chicken Rice (Print Version)

# Ingredients:

→ Protein

01 - 6 chicken thighs without skin and bones (or 4 chicken breasts flattened out evenly)

→ Seasonings

02 - 1 teaspoon onion powder
03 - 3 teaspoons chili powder
04 - 1 teaspoon salt
05 - 1 teaspoon paprika
06 - 1 teaspoon garlic powder
07 - 1/4 teaspoon ground cayenne
08 - 1/4 teaspoon black pepper

→ Other Ingredients

09 - 2 1/4 cups chicken stock
10 - 1 lime, squeezed (serve more lime slices on the side)
11 - 1 cup of uncooked plain white rice
12 - A couple of spoons of vegetable oil
13 - Fresh cilantro to sprinkle on top

# Instructions:

01 - Stir chili powder, paprika, garlic powder, onion powder, cayenne, salt, and pepper together. Use half for the chicken, and save the leftover mix.
02 - Warm up oil in a skillet over medium heat. Cook each side of the chicken for around 3-4 minutes until it browns. Take it out of the skillet.
03 - Add the rice, chicken stock, lime juice, and the rest of the seasonings into the skillet. Stir well, then place chicken over the mixture.
04 - Cover the skillet and let it cook for 20-25 minutes, or until all the liquid disappears. Stir rice, sprinkle cilantro, and add fresh lime juice before eating.
