Preheat your oven to 350 degrees and lightly grease the mini muffin pan.

Put 2 to 2 1/2 spoons of shredded cheese into each muffin section. Lay 3 to 4 pepperoni slices over the cheese, and sprinkle the herb mix on top.

Cook them for 7-8 minutes until golden. Let them sit for five minutes to cool down before taking them out.
