Classic Steak Frites (Print Version)

# Ingredients:

→ Creamy Citrus Herb Butter

01 - 3 sticks of unsalted butter, softened at room temperature
02 - 1/4 cup thinly sliced green onions
03 - 1 tablespoon chopped fresh rosemary
04 - 1 fresh lemon, juiced and zested
05 - 2 teaspoons flaky sea salt
06 - 2 garlic cloves mashed into a paste
07 - 1/2 teaspoon ground black pepper
08 - 2 tablespoons finely minced thyme leaves

→ Crispy Homemade Fries

09 - Coarse salt for seasoning
10 - 3 large russet potatoes, sliced into thick matchsticks

→ Top-Tier Steak

11 - 2 New York strip steaks (12 ounces each)
12 - 4 tablespoons unsalted butter
13 - 8-10 thyme sprigs, fresh
14 - 8-10 whole garlic cloves, lightly smashed
15 - 2 tablespoons good quality olive oil
16 - Generous amounts of salt and black pepper for seasoning

# Instructions:

01 - Take your butter and whip it with a stand mixer’s paddle attachment until it’s super fluffy—about 5 to 7 minutes on high. Next, stir in the rosemary, thyme, green onions, mashed garlic, lemon zest, and juice. Season with salt and pepper before setting it aside so the flavors can hang out together.
02 - Rinse your sliced potatoes in cold water, swishing them a couple of times to get rid of starchy residue. Rinse again for good measure and dry them off. For ultimate crispiness, fry them twice! Cook at 300°F for 3 minutes to start (you could do this step ahead), and then fry again at 350°F for another 3 to 5 minutes until golden. Sprinkle with salt as soon as they’re out.
03 - Rub your steaks generously with salt and pepper. Heat your pan until it’s almost smoking, add the oil, and then place the steaks down. Hold the steak against the pan for about 15-20 seconds, then don’t touch them for 2 to 3 minutes. Flip, throw in the garlic, thyme, and butter, and start spooning the butter over the steak for another 2 to 4 minutes as it cooks. Let it rest 3 to 4 minutes before slicing.

# Notes:

01 - You can make the butter in advance, and it freezes well—perfect for a quick steak later!
02 - To cook your steak medium, go for an extra minute on each side and rest it another minute.
03 - Rinsing the potatoes is a must if you want fries with that crunchy outside.
