Golden Butter Jasmine Onion (Print Version)

# Ingredients:

→ Base

01 - 2 cups broth or water (chicken or vegetable)
02 - 1 1/2 cups jasmine rice

→ Aromatics & Fats

03 - 1 large onion, sliced thin
04 - 2 tablespoons butter
05 - 1 tablespoon olive oil

→ Seasonings

06 - 1 tablespoon freshly chopped parsley (optional for topping)
07 - 1 teaspoon garlic powder (optional)
08 - 1/2 teaspoon black pepper
09 - 1 teaspoon salt

# Instructions:

01 - Warm a big skillet over medium heat with olive oil and 1 tablespoon of butter. Toss in the onion slices and a pinch of salt. Stir around for 12–15 minutes, letting them get soft and golden. Put aside once they’re ready.
02 - Wash the jasmine rice under cool running water. Keep rinsing until the water isn't cloudy anymore.
03 - In a medium pot, melt the other tablespoon of butter over medium heat. Mix in the washed rice until it’s all slick with butter.
04 - Pour in the broth or water, then sprinkle in the salt and black pepper. Bring it to a boil. Turn the heat down real low and cover it. Let it gently simmer for 15–18 minutes till the rice absorbs all the liquid and gets soft. Take it off the heat and keep it covered for 5 extra minutes.

01 - You can switch water for broth to add more flavor.
