Sweet Potato Beef Bake (Print Version)

# Ingredients:

01 - 1 tablespoon of olive oil.
02 - 1/4 teaspoon garlic powder.
03 - 1 medium yellow onion, chopped.
04 - 1 pound ground beef, lean.
05 - 2 medium sweet potatoes, cut into cubes.
06 - 1/2 teaspoon salt.
07 - 14.5 oz of vegetable broth.
08 - 1/2 teaspoon black pepper.
09 - 2 teaspoons dried rosemary.
10 - 1/2 cup of heavy cream.
11 - 1 1/3 cups of quick-cooking rice.
12 - 2 cups of shredded cheddar cheese.
13 - 2 teaspoons parsley flakes.

# Instructions:

01 - Turn the oven to 400°F. In a casserole dish, throw in diced potatoes, seasonings, and oil and mix well.
02 - Let the sweet potatoes bake for about 30 minutes.
03 - In a skillet, cook the ground beef until browned, then toss in onions and cook until they soften up.
04 - Mix the casserole dish potatoes with the cream, broth, rice, and beef mixture. Cover it and bake it for an extra 15 minutes.
05 - Throw shredded cheddar on top and bake for another 10 minutes without covering it.
06 - Pull out of the oven, wait 10 to 15 minutes to cool, and toss parsley on top.

# Notes:

01 - Orange or purple sweet potatoes will work.
02 - If the beef is fatty, take out the extra grease.
03 - Chicken broth works just fine as a swap.
