Sour Cream Beef Noodles (Print Version)

01 - 8 ounces of egg noodles
02 - 1 cup shredded cheddar cheese
03 - 1 cup of creamy sour cream
04 - 2 cloves of garlic, finely chopped
05 - 1 teaspoon of Italian herbs
06 - 1 cup smooth cottage cheese
07 - 1 pound of ground beef, preferably lean
08 - ½ a yellow onion, diced
09 - 2 cans of tomato sauce (15 ounces each)
10 - Salt and freshly cracked black pepper, as preferred

# Instructions:

01 - Start off by warming up the oven to 350°F. Grab a 9x13-inch dish and lightly coat it with some cooking spray.
02 - Heat up a large skillet over medium-high. Toss in the beef and onion, cooking until the beef browns and the onion softens, which takes about 10 minutes. Stir in the garlic at the last minute and let it become fragrant.
03 - Pour the tomato sauce into the skillet and add the Italian seasoning. Let it cook for around 5 minutes while stirring every now and then. Add salt and pepper until the flavor pops, then take it off the heat.
04 - While the sauce comes together, boil the egg noodles in a big pot of salted water. Cook until they're just tender but not mushy. Strain them with a colander and get them ready to mix.
05 - Take a large mixing bowl and stir together the cottage cheese and sour cream until smooth. Toss in the cooked noodles, season with a pinch of salt and pepper, and gently fold until it's all creamy.
06 - Spoon half of the cheesy noodle mix into the baking dish. Spread half of the meat sauce on top. Repeat the same layers once more, finishing with the last layer of meat sauce.
07 - Scatter the cheddar cheese evenly on top. Bake it in the preheated oven for about 30 minutes, or until it's bubbling and the cheese has melted nicely.
08 - Once it's out of the oven, let it sit for about 10 minutes to settle. Then scoop and enjoy this comforting dish with loved ones.
