Mediterranean Salmon Dish (Print Version)

# Ingredients:

→ Salmon

01 - 4 pieces of salmon, around 7 oz each
02 - 1 lemon, cut into slices
03 - 2 teaspoons of basil, dried
04 - 2 teaspoons of garlic powder
05 - 1/2 teaspoon kosher salt
06 - 2 teaspoons dried oregano
07 - 1 teaspoon parsley, dried
08 - 1/4 teaspoon black pepper
09 - 1/2 teaspoon onion powder

→ Topping (Mediterranean Style)

10 - 1 tablespoon fresh mint, minced
11 - 1 tablespoon olive oil
12 - Salt and pepper for seasoning
13 - 1/3 cup feta cheese
14 - 1/2 cup olive variety (kalamata)
15 - 1 tablespoon parsley, freshly cut
16 - 1/2 cup small cherry tomatoes, chopped

# Instructions:

01 - Turn your oven on to 400°F to get it warm.
02 - Stir together all seasonings in a small dish. Dab the salmon dry, then sprinkle each piece with a teaspoon of the mixture.
03 - Put salmon into a greased cast iron pan, then spread lemon slices around the sides.
04 - Let it bake in the oven for 12 to 15 minutes—145°F internal temp means it's done.
05 - Stir together all the topping ingredients in a bowl.
06 - Pour a little dressing over the salmon. Scoop on the olive and feta topping. Add couscous salad on the side if you like.

# Notes:

01 - Switch to an air fryer—400°F for 8 to 10 minutes works fine.
02 - Store cooked salmon in the fridge for up to 3 days.
03 - It matches nicely with a Mediterranean-style couscous side.
